Chestnut flour is obtained by grinding chestnuts picked in autumn, dried and peeled. This flour has a greyish colour and a rather mild taste. It is generally blended with wheat flour in a proportion of 25 to 50%, according to taste...

This mixture is particularly important in bread-making since chestnut flour does not contain gluten and without it the dough cannot rise. This gluten-free flour can be consumed by people suffering from coeliac disorders.

It mainly contains trace elements, protein, calcium and phosphorus.
