A speciality of the Chinese province of Fujian, white teas take their name from the white down covering the young sprouts of the  variety of tea plants selected to make it, called Da Bai, "Grat White".

Considered as refreshing by the Chinese, these teas are drunk during the hot season. They are particularly subtle and they require great care in their preparation.

They are excellent, prepared in Gaiwan, with short and repeated brewings, or in longer brewing with lukewarm or cold water. An interesting experience is to let white teas stand for a whole night in cold water in the refrigerator.

Paï Mu Tan is only picked in spring. The leaves are just wizened then dried. Covered with a heavy white down these leaves  give a tea of a light apricot colour, fruity and slightly spicy.
