A very famous tripe speciality from Provençal cooking and more specially from Marseilles, the Pieds Paquets are mutton tripes stuffed with a ham, garlic and herb mince rolled in the shape of little pouches slow-cooked for 6 to 7 hours in white wine and stock with cooked tomatoes and basil.

They can also be called pieds et paquets or pieds en paquets. Made according to tradition by a master cook the mutton pieds et paquets are often feast day dishes served with potatoes or fresh pasta...
