Garlic is the main ingredient of the Provençal aïoli (garlic mayonnaise) the emblem of traditional Provençal cooking.
Garlic flakes have been have been famous ever since medieval garlic dressings.
It is found in numerous Provençal preparations such as pistou, garlic butter, garlic dressings and black tapenades (olive spreads).
Be careful: deshydrated garlic flakes are much stronger than fresh or dried garlic.
