A bright green olive with a taste of chestnut the Lucques olive is grown mostly in the Aude region.
Picked when it is still green this almond-shaped olive has a characteristic flavour of toasted chestnut. Its flesh is fine, firm, pulpy and it is perfect for Provencal cooking.
