The Cailletier black olive is a must in olives… The Cailletier is the main variety of olive tree in Provence.
What distinguishes it from other varieties, apart from its great height, is the small size of its olives. This tree, sometimes enormous, produces tiny black olives which are among the tastiest of table olives.
After a long soaking in a special brine, this tiny black olive gives a powerful taste in mouth. It is therefore very well suited for stews, salads and many provencal receipes.
