This powder mullet poutargue (egg pouch) is ideal for provençal cooking. Poutargue (or boutargue or caviar from the Méditerranée or caviar from Martigues) is a very fine produce of Provençal cooking.

Made from salted dried mullet eggs it is a strong fish speciality from the town of Martigues. Today a very refined and expensive produce of Provençal tradition poutarge is tasted on its own in very small quantity and this presentation in flakes will enable you to season many dishes.

Going well with fresh cream grated poutargue will also serve in sauces for fish, rice and pasta. It is also ideal for pizzas, scrambled eggs and on buttered toasts.
