Bull Gardiane (Stew): the traditional dish of people from Camargue since this stew is prepared with bull meat from bulls bred in that region.

This is the only meat in France to have been awarded an AOC (certificate of origin). The meat is marinated then slow-cooked (more than four hours) and flavours grow stronger, spiced by a pinch of chilli pepper...

Served with rice, this gardiane will be a perfect dish in the pure tradition of Provence.
