Vacuum-packed Mullet Poutargue

Poutargue (or boutargue or caviar from the Méditerranée or caviar from Martigues) is a very fine produce of Provençal cooking. Made from salted dried mullet eggs it is a strong fish speciality from the town of Martigues.

Today a very refined and expensive produce of Provençal tradition poutarge is tasted on its own in very small quantity cut in slices no thicker than hosts. Some specialists of Provençal cooking add a dash of lemon.

It can also be grated on pasta. Poutargue pouches are coated with wax so as to stop their maturation at the right moment and protect the poutargue from outside contact. You must cut poutargue in thin slices , take off the wax protection and if you wish peel it in order to rid it of the thin skin of the fish egg pouch.

Average net weight of this poutargue pouch: 120 to 160g.
